0.333 cup powdered sugar
1 egg
1 cup milk
2 ¼ cups all-purpose flour
½ tsp baking soda
cup butter (melted and cooled)
vegetable oil (for deep frying)
powdered sugar (for dusting)

Preparation steps

Peel the bananas, cut in half lengthways and once widthways. Place in a bowl and mix with the lime juice and rum. Dust with 2 tbsp icing sugar and leave to soak up the flavours for around 10 minutes.

In a separate bowl, whisk the egg with the milk. Mix the flour, bicarbonate of soda and remaining icing sugar together in a bowl and gradually add to the egg and milk mixture, then stir in the melted butter.

Heat the oil in a frying pan. Drain the bananas, coat in batter and fry in the hot fat until golden. Remove from the pan with a slotted spoon and drain on kitchen paper. Serve dusted with icing sugar.
