Curry Rice Salad with Avocado and Grapefruit

- 1 Avocado
- 1 pink Grapefruit
- 1 bunch scallions
- 300 grams Long grain rice
- 600 milliliters water
- 150 grams Westphalian Bone-in ham
- 1 red chili pepper
- 1 small head Lollo Verde
- 3 tsps Curry
- salt
- 2 lemons (juiced)
- white peppers
- 6 Tbsps sesame oil
Preparation steps
Cook 150 grams (approximately 5 1/3 ounces) of rice in 300 ml (approximately 1 1/4 cups) of water for 16 minutes. Add curry to rice, mix well. Drain rice and cool. Cook the rest of rice in the same manner and cool. Rinse and dry scallions, cut diagonally into thin rings.
Peel avocado, halve and core. Cut avocado pulp into thin strips and sprinkle with juice of half a lemon. Peel grapefruit and carefully remove segments. Rinse chile pepper and cut into fine strips. Slice ham into slightly wider, elongated strips.
Combine all salad ingredients carefully. Make a dressing by combining sesame oil, remaining lemon juice and grapefruit juice. Season with salt and white pepper. Drizzle salad with dressing. Rinse and spin dry lettuce leaves. Arrange leaves in salad bowl, top with salad and serve.
