- 175 grams Couscous
- 40 grams Pine nuts
- 2 Tomatoes
- 200 grams Mozzarella
- 150 milliliters Tomato juice
- 1 pinch sugar
- 1 Tbsp lemon juice
- 2 Tbsps freshly chopped Basil
- salt
- Basil (for garnish)
Preparation steps

Add the couscous to a bowl, and cover with 175 ml (approximately6 ounces) of boiling water. Cover and let steep for 10 minutes. Remove the cover and fluff the couscous with a fork, then let cool. Toast the pine nuts in a dry frying pan. Remove from the pan and let cool.

Rinse the tomatoes, and cut into quarters. Remove the seeds and dice. Cut the mozzarella into cubes. Mix the tomato juice with the sugar and lemon juice. Mix in the basil, diced tomatoes, and mozzarella. Fold in the couscous. Season to taste with salt and garnish with the basil and pine nuts.
