- 1 shallot
- 1 clove garlic cloves
- 41 ozs fresh Tomatoes (rinsed)
- 2 Tbsps olive oil
- Sea salt (to taste)
- cayenne pepper (to taste)
- 1 pinch sugar
- 16 ozs Spaghetti
- ¼ cup Parmesan (freshly shaved)
Preparation steps
1.
Peel and finely chop the shallot and garlic. Set aside.
2.
Drop the tomatoes into boiling water for a few seconds, refresh in cold water, then skin, quarter, deseed and dice.
3.
Heat the oil in a large skillet and sweat the shallot and garlic until translucent and fragrant. Add the tomatoes and simmer for about 10 to 15 minutes. Season to taste with salt, cayenne pepper and sugar.
4.
Meanwhile, cook the spaghetti according to the package instructions until al dente. Drain the spaghetti and divide between warmed plates. Top with tomato sauce and sprinkle with shaved Parmesan cheese.
