1 ½ cups Long grain rice
1 handful Basil (some leaves set aside to garnish, rest chopped)
1 Lime (juiced)
4 Tbsps olive oil
1 clove garlic cloves (finely chopped)
1 red chili pepper (finely chopped)
2 cups Seafood (ready to eat)
2 cups cherry Tomatoes (halved)
0.333 cup dry white wine

Preparation steps

1.
Cook the rice in boiling salted water for around 20 minutes until al dente.

Mix the chopped basil with the lime juice and 2 tbsp oil.
3.
Fry the garlic and the chilli in the remaining oil. Add the seafood and the tomatoes and fry for 3-4 minutes, stirring continuously. Deglaze with the wine and season with salt, ground black pepper and nutmeg.
4.
Drain the rice and stir in the lime and basil dressing. Arrange on plates, add the seafood mixture and serve garnished with basil.
