- 2 Avocados (peeled, pitted and diced)
- 1 Tbsp Lime juice
- 1 scallion (white part only, finely chopped)
- 1 garlic clove (grated)
- ½ tsp fresh ginger (grated)
- 1 Vanilla bean (halved lengthways, seed scrapped out)
- ground cinnamon
Preparation steps
1.
Mix together the avocados and the lime juice. Stir in the spring onion, garlic, ginger and pinch of vanilla seeds and season with salt and ground black pepper.
2.
Garnish with a little cinnamon and serve with potato chips.
