- For the mousse
- 1 cup milk Chocolate couverture (chopped)
- 1 cup dark Chocolate couverture (chopped)
- 2 eggs (separated)
- 2 Tbsps powdered sugar
- ⅛ cup Cognac
- 1 ⅔ cups cream (at least 30% fat)
- For the brittle
- ⅔ cup sugar
- 1 Tbsp cocoa powder
Preparation steps
1.
Melt the chocolate in a bain-marie.

Mix together the egg yolk and icing sugar in another bain-marie and beat the egg whites along with a pinch of salt until stiff.

Add the melted chocolate and the Cognac to the egg yolk mixture and mix well using a whisk. Carefully fold in the egg white and the cream.
4.
Pour the mixture into 4 ramekins and chill for 2 hours.
5.
Caramelise the sugar in a pot and dust with cocoa. Pour onto a baking try lined with grease-proof paper. Spread thinly and leave to cool. Break into pieces and use to garnish the chocolate mousse. Serve immediately.
