- 4 red chili peppers
- 1 ½ inches fresh ginger
- 4 Tbsps honey
- ⅞ cup dry white wine
- 1 lemon
- 4 Pear
Preparation steps

Wash the chillies, remove the stalks and cut the chillies into rings. Peel the ginger and cut into sticks. Put the ginger, chillies, honey and white wine into a pan and bring to the boil. Simmer gently for about 10 minutes. Meanwhile squeeze the lemon and add the juice to the pan with the pears. Cover, remove from the heat and leave to go cold, stirring carefully from time to time, so that the pears can evenly absorb the flavours.
