3 cupsonions chopped
¼ cupsvegetable oil
1 tablespoongarlic minced
2carrots thinly sliced
53 ouncesground Beef
¼ cupsChili powder
1 tablespoonground Cumin
3 tablespoonsfresh oregano
1 tablespoonred peppers crushed
2 cupsTomato sauce
1 cupBeef broth
3 tablespoonsCider vinegar
2 ½ cupscanned Kidney beans rinsed and drained
2green Bell pepper chopped
shredded Cheese for garnish (optional)

Directions

1 In a large pot or Dutch oven, cook the onions in oil, over medium heat, stirring occasionally, until soft and translucent. Add the garlic and the carrots, and cook the mixture, occasionally stirring, for 1 minute.
2 Add the beef and continue cooking over medium heat, stirring and breaking up any lumps, for 10 minutes, or until nicely browned. Add the chili powder, cumin, paprika, oregano, crushed red pepper and cook the mixture, stirring, for 1 to 2 minutes. Add the tomato sauce, broth, and vinegar, bring the mixture to a boil, and simmer, covered, stirring occasionally, for 45 minutes to 1 hour, or until the meat is tender.
3 Add the kidney beans, bell peppers, and salt and black pepper to taste and simmer the mixture, uncovered, for 15 minutes, or until the bell peppers are tender. Serve in bowls. Garnish with shredded cheese, if desired.
