- 3 Tbsps Corn oil
- 3 shallots (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 5 ozs floury potatoes (peeled and diced)
- 3 Corn
- 2 ½ cups chicken stock
- ⅞ cup cream (30% fat)
- 1 tsp Turmeric
- salt

- 2 red chili peppers (finely chopped)
- scallions (cut into rings)
- Chili powder

1 Small pot, 1 Baking sheet, 1 Casserole dish, 1 Bowl, 2 Small bowls, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Teaspoon, 1 Brush, 1 Salad spinner, 1 Plastic wrap
Preparation steps

Heat the oil in a pan and gently the shallots and garlic until translucent.

Add the potatoes, corn kernels, chicken stock and cream. Season with turmeric, salt and pepper. Bring to a boil and simmer for 20 minutes. Remove from the heat, take out some of the corn kernels and purée the soup in a blender. Strain through a sieve back into the pan.

Add a little more stock if necessary and check the seasoning. Add the chillies to the soup with the reserved corn kernels and spring onion rings.

Ladle into warmed bowls and served sprinkled with a little chilli powder.
