Preparation steps

1.

Peel the onion and garlic. Slice some of the onion into rings for garnish and set aside. Chop the remaining onion and the garlic. Rinse the chile peppers and finely chop.

2.

Rinse the turkey breast, pat dry and finely chop or mince. Sauté the ground turkey in hot oil until cooked through. Add the onion, garlic, and chile peppers and continue to sauté. Stir in the tomato paste. Deglaze with the chicken broth and simmer gently for about 15 minutes.

3.

Rinse the bell peppers, pat dry, halve, remove seeds and ribs, and chop. Blanch the tomatoes, cool in ice water, peel, quarter, and remove seeds.

4.

Rinse and drain the corn and beans. Add the bell peppers, tomatoes, corn, and beans to the chili. Simmer for an additional 15 to 20 minutes. Add more broth, if desired. Season with salt, pepper, and cayenne pepper. Serve topped with the reserved onion.
