- 6 cups Cooked chicken (shredded)
- 1 cup Barbecue sauce
- 2 cups Sour cream
- 4 ½ ozs canned, green chili peppers (chopped)
- 2 cups frozen Corn (thawed)
- 1 small Red onion (peeled and diced)
- 1 clove garlic cloves (peeled and pressed)
- 1 cup shredded, smoked Gouda (shredded)
- 2 cups shredded monterey jack cheese
- 1 tsp Cumin
- 1 tsp Chili powder
- 1 Tbsp ground Black pepper
- 24 Flour tortillas
- 1 cup vegetable oil (for frying)
- 1 cup Taco sauce
- 1 green Bell pepper (rinsed; cored and finely chopped)
- 1 red Bell pepper (rinsed; cored and finely chopped)
- ½ cup shredded monterey jack cheese (shredded)

Preparation steps
1.
In a large bowl, mix the first nine ingredients along with spices. Toss well.

In a large pan over medium heat, warm 1/4 cup of oil.

Put 2 tablespoons of the chicken filling into each tortilla, roll, and secure with a toothpick.

Working in 4 batches (add 1/4 cup oil between batches), pan-fry until the tortillas are golden brown, about 3 minutes per side.
5.
Drain on a paper towel, transfer to a platter.
6.
Divide taquitos between serving plates. Drizzle with taquitos with taco sauce and sprinkle with chopped peppers and Monterey Jack cheese. Serve with a spoonful of guacamole if desired.
