- 1 chicken (approx. 1.2 kg, cut into 6-8 pieces)
- 3 handfuls parsley (leaves picked, reserving 5-6 sprigs whole)
- 2 day-old Bread roll (torn into pieces)
- 1 tsp lemon zest
- 2 eggs
- ½ cup all-purpose flour
- 4 Tbsps sunflower oil

Preparation steps
1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.
2.
Put the parsley leaves in a blender with the bread and grind to a fine crumb. Mix in the lemon zest.
3.
Whisk the eggs in a flat bowl and spread the flour and breadcrumbs over separate plates. Season the chicken pieces with salt and ground black pepper, then coat in flour. Roll in the egg then cover in breadcrumbs. Place on the tray and bake for approx. 35 minutes.
4.
Lightly crush the rest of the parsley in a mortar with the oil. Scatter over the chicken pieces before serving.
