- 1 chicken (1.4 kg, ready to cook)
- 4 sprigs Thai basil (leaves chopped)
- 1 clove garlic cloves (crushed)
- ½ unwaxed lemon (juiced, zest grated)
- olive oil
- 1 tsp paprika

Preparation steps

Preheat the grill to hot.

Remove the backbone of the chicken. Turn the chicken over and pull gently apart, pressing the breast down a little and turning the legs out a bit.
3.
Mix together the basil, garlic, lemon juice and zest and 6 tbsp oil. Season with salt, ground black pepper and paprika. Brush onto the meat and place on the hot grill. Grill for around 20-25 min, turning occasionally and brushing with the marinade every so often.
4.
Arrange on plates and serve immediately. Goes well with a tomato and bean salad.
