Ingredients

For Fried Drumsticks
12 Chicken drumstick
3 eggs (beaten)
4 cups vegetable oil
1 cup flour
1 tsp cayenne pepper
1 tsp paprika
1 tsp salt
For Fried Bananas
2 Tbsps butter
4 fresh, firm Banana (peeled and cut into 1-inch pieces)
¼ cup brown sugar
1 tsp black Sesame seeds (optional)
1 Tbsp fresh Lime juice

Preparation steps

For Fried Drumsticks:

Rinse the chicken under cold running water and pat dry with paper towels. Boil chicken in a pot of water for 10 minutes or until meat is cooked through. Cool slightly.

In a large saucepan or deep fryer, heat vegetable oil over medium-high heat.

Sift flour, cayenne pepper, paprika, and salt together into a large shallow dish.

Line a baking sheet with parchment paper.

Working with 1 drumstick at a time, place drumstick in the flour mixture and toss to coat. Shaking off any excess flour. Place drumstick in the egg mixture and then back into the flour mixture, once again shaking off any excess flour. Place coated drumstick on prepared baking sheet. Repeat until all of the drumsticks are coated.

Once the oil is hot and ready for frying, cook 3 or 4 drumsticks at a time until golden brown. Carefully, remove from hot oil and drain on absorbent paper towels. Repeat the process with the remaining drumsticks.

Cool completely before serving.

Heat a wok or skillet over high heat and add 2 tablespoons of butter. Once melted, toss in bananas and add brown sugar. Cook down sugar; add the sesame seeds (if using) and the lime juice. Stir together and serve with fried drumsticks.
