- 8 small, green Banana
- Lime juice (from 1 lime)
- 2 tablespoons clarified butter
- 1 tablespoon cane sugar
- 1 teaspoon cinnamon
- 2 tablespoons dried Shredded coconut
Peel the bananas and rub with the lime juice.
Heat the butter in a wide pan, add the sugar and cook, stirring, until the sugar is starting to caramelise.
Turn down the heat, add the bananas and fry on all sides until lightly browned. Sprinkle with the cinnamon and cook for another 30 seconds.
Sprinkle the bananas with the coconut and serve immediately.
