3 Tbsps lemon juice
2 Tbsps olive oil

1 Tbsp butter
1 tsp Pastry flour
100 milliliters milk
100 milliliters Vegetable broth
white peppers
Nutmeg
2 Tbsps finely grated Parmesan
1 Tbsp Cress (or sprouts, or herbs for garnish)

Preparation steps

Peel and finely chop the garlic and shallot. Cut the chicken into bite size pieces. Mix 2 tablespoons of lemon juice, oil, salt, pepper, shallot and garlic. Mix in the chicken pieces. Add the chile peppers (whole or crushed) and pour the entire mixture into a buttered pan.

Preheat the oven to 200°C (approximately 400°F). Melt the butter. Add the flour and saute briefly. Add the milk and broth. Bring to a boil. Season with salt, white pepper, nutmeg and lemon juice. Stir in the parmesan. Spread the mixture over the meat. Bake for about 30 minutes. Remove from the oven. Season with pepper. Garnish with sprouts, cress or herbs and serve.
