Cherry Cheesecake

- 1 Chocolate cake (about 22 cm)
- 2 sheets gelatin
- 1 lemon (juice)
- 150 grams Yogurt (0.1% fat)
- 500 grams Quark
- 400 grams Whipped cream
- 50 milliliters Red wine
- 50 milliliters water
- 2 Tbsps sugar
- 1 tsp cornstarch
- ½ Cinnamon stick
- 250 grams Cherries (pitted)
Preparation steps
Soak the gelatin in cold water until soft, about 10 minutes. Squeeze the excess water from the gelatin and dissolve in the heated lemon juice. Add 2 tablespoons of yogurt to the lemon juice. Add the remaining yogurt and the quark. Stir until smooth.
Whip the cream and stir 1/3 into the quark mixture. Fold the remaining cream into the quark mixture.
Place the chocolate cake layer in a cake ring or springform pan.
Spread the quark mixture over the cake layer and smooth. Chill in the refrigerator.
Mix the wine, water, and sugar in a pot. Add cornstarch and bring to a boil. Add the cinnamon stick and let boil while stirring until thick. Remove the cinnamon stick. Add the cherries and leave to cool.
Spread the cherry filling on top of the quark and chill again. Remove the cake ring and place chocolate hearts around the edge before serving, if desired.
