150 grams Pastry flour
60 grams sugar
70 grams softened butter
1 ½ Tbsps cold water
500 grams Quark
2 eggs
40 grams sugar
½ lemon (zested and juiced)
1 tsp Vanilla sugar
1 tsp Ground cinnamon
500 grams Cherries
1 packet Pie glaze
powdered sugar (for dusting)

Preparation steps

For the crust: Beat the flour, sugar and butter until crumbly. Quickly knead the dough with hands until smooth, adding a bit of cold water, if needed. Press the dough into the bottom and up the sides of a springform pan. Prick the bottom with a fork several times. Refrigerate for at least 1 hour, then bake in an oven preheated to 200°C (approximately 400°F) for 15-20 minutes, until lightly golden.

For the filling: Separate the eggs. Beat the quark, egg yolks, sugar, lemon zest and juice, vanilla sugar and cinnamon until smooth and creamy. Beat the egg whites until stiff and fold into the quark mixture. Rinse the cherries, remove the pits and set 1/3 aside for garnish. Spread half of the quark mixture into the prepared crust, distribute the cherries over the mixture and top with the remaining quark mixture. Reduce the oven temperature to 175°C (approximately 350°F) and bake the cheesecake for 60 minutes. Remove from the oven and allow to cool in the springform pan.

Prepare the cake glaze according to the package instructions. Carefully remove the cooled cheesecake from the springform pan, distribute the reserved cherries on top, drizzle with the cake glaze and dust with powdered sugar.
