- 100 grams dried Cherries
- 110 grams cornstarch
- 1 lemon
- 1 tablespoon Cultured butter (10 grams)
- 1 tablespoon breadcrumbs
- 4 eggs
- 1 pinch salt
- 150 grams brown cane sugar
- 1 small package Bourbon vanilla powder
- 1 kilogram Cottage cheese (or low-fat quark)
- 1 small package Baking powder
- 1 tablespoon Poppy seeds
- 1 tablespoon powdered sugar (10 grams)
In a small bowl, mix dried cherries and 1 teaspoon cornstarch. Rinse lemon in hot water, wipe dry and grate zest. Cut lemon in half and squeeze out juice.
Grease a loaf pan (about 30 x 11 cm) (approximately 12 x 4 inches) with butter and sprinkle with breadcrumbs.
Separate the eggs. Add salt to the egg whites and beat with the whisk attachment of a hand mixer until stiff. Refrigerate egg whites.
Add sugar, vanilla, egg yolks, and 2 tablespoons of water to a large bowl and beat with a hand mixer until creamy. Gradually stir in cheese or quark.
In a cup, mix baking powder and remaining cornstarch. Stir into the egg yolk-cheese mixture.
Place the cherries in a sieve and shake to remove excess cornstarch. Mix cherries, 1 teaspoon of lemon zest, 3 tablespoons of lemon juice and poppy seeds into the egg yolk-cheese mixture.
Carefully fold in egg whites with a whisk. Pour batter into prepared loaf pan and smooth with a rubber spatula. Bake on the second rack from the bottom in a preheated oven at 175°C (step 2 convection 150°C, gas) (approximately 350°F/convection 300°F) until firm and brown on the surface, 80-90 minutes.
Remove from the oven and allow to cool for 5-10 minutes. Remove cake from the pan and let cool on a wire rack completely. Before serving, place powdered sugar in a tea strainer and sprinkle over cake.
