Cheese and Avocado Salad
Chop the macadamia nuts and toast slightly in a dry skillet. Transfer to a plate.
Peel and halve the avocados, remove the seeds and cut the flesh into pieces. Drizzle with lemon juice and oil and season with salt and pepper. Mix well.
Dice the Emmentaler. Trim and rinse the scallions and cut into pieces.
Mix everything together in a bowl and serve showered with macadamia nuts.
