Asparagus and Avocado Salad with Feta Cheese
Peel the bottom half of each asparagus spear. Sauté asparagus in 2 tablespoons oil. Add vegetable broth, cover and simmer until al dente, about 5 minutes.
Mix in garlic, then remove from the heat. Add vinegar and season with salt and pepper. Stir in remaining olive oil and let marinate about 30 minutes.
Halve avocado, remove pit and scoop out flesh. Cut into thin slices. Fan slices on plates, top with asparagus and sprinkle with crumbled feta. Drizzle with marinade. Serve garnished with basil leaves.
