- For the carp
- 2 Carp (about 1.5 kg, prepared by the fish seller)
- 8 Tbsps White vinegar
- 2 packets Frozen mirepoix blend (about 50 grams)
- 2 heaping Tbsps salt
- 1 tsp allspice
Preparation steps

For the carp, rinse the carp gently under running water. Boil about 3 liters (approximately 15 cups) of water with vinegar, mirepoix blend, allspice berries and salt in a large pot (preferable oval pot). Place the carp into the boiling water and cook covered for 25-30 minutes over low heat.

For the leeks and apples, trim, rinse and cut the leeks into thin rings. Rinse the apples, cut into quarters, remove seeds and cut into thin slices. Mix the apple slices with lemon juice. Heat butter in a large skillet and saute the leeks and apples for 7 minutes. Season with salt and pepper.

Lift out the carp with a skimmer from the broth and drain briefly. Arrange the leeks and apples into 2 plates and serve with one carp each.
