350 grams Pastry flour
150 grams Rye flour
1 Tbsp salt
1 tsp ground Caraway
1 cube Yeast (42 grams)
2 Tbsps honey
Pastry flour (for work surface)
3 Tbsps Caraway (to sprinkle)

Preparation steps

1.

Mix the two flours with salt and caraway seeds in a bowl. Crumble in yeast, add honey and mix with about 400 ml (approximately 2 cups) of lukewarm water for 10 minutes. Dough should be smooth and pull away from bowl. If necessary, add more flour or water.

Allow to rest in a warm place for about 30 minutes, kneading once or twice while rising. Then separate into 10-12 equal portions and shape into rolls. Allow to rest for another 30 minutes on a floured surface.

Preheat oven to 200°C (approximately 400°F). Place an oven safe bowl full of water on the bottom of oven.

Brush rolls with some warm water and sprinkle with caraway seeds. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes. Remove, cool and serve.
