1 Tbsp Agar
salt

2 ozs walnut kernels
22 ozs italian plums (about 12)
1 Orange
2 ozs whole cane sugar
7 ½ ozs Arugula (1 handful)
5 ozs Radicchio (1 small head)
peppers (freshly groung)

Preparation steps

Grate Montello cheese. Mix milk with agar-agar and boil for 2 minutes. Then remove from heat and stir in half of the cheese, season with salt and chill. Whip the cream until stiff. When the montello mixture begins to gel, fold in the whipped cream and refrigerate the mousse for about 3 hours.

Cover a baking tray with baking paper. Sprinkle the remaining Montello on top and bake in a preheated oven at 200 °C (convection oven 400 °F for about 5 minutes until golden; then remove, let cool and break into pieces.

Toast walnuts in a pan without fat for about 3 minutes over medium heat, then remove and let cool.

Wash, halve and stone the plums, and squeeze the orange. Caramelize sugar in a pan over low heat. Then add orange juice and 5 Tbsp water and simmer everything for 2-3 minutes, then set aside. Put in the plums and let them steep in the caramel for 4-5 minutes.

Clean arugula and radicchio, wash, pluck smaller and spin dry.

Cut 1 dumpling from the mousse and arrange in the center of each plate. Surround with caramelized plums and walnuts. Spread lettuce over it, garnish everything with Montello chips and grind pepper over it.
