18 ozs Plum

Preparation steps

Halve the lemon and squeeze out the juice. Clean, wash and finely chop the lemongrass. Mix with sour cream, 2 tablespoons honey and 3 tablespoons lemon juice and refrigerate for 3-4 hours.

Then pass through a sieve and mix with cottage cheese. Divide into 4 portions and wrap each in a clean muslin cloth. Tie tightly with twine and let drain over a bowl in the refrigerator for about 24 hours.

Clean plums, wash, remove stones, cut plums into slices. Mix with remaining lemon juice and remaining honey and grill on a hot grill in a bowl for 3-4 minutes and let it caramelize slightly.

Meanwhile, wash mint, shake dry and cut leaves into fine strips. Unwrap layered cheese balls, arrange with plums and drizzle with the leaked juice of the plums. Garnish with mint strips and, if desired, the edible flowers.
