- 4 Beefsteak tomato
- ½ Cucumber (Organic)
- 1 handful large Basil
- 1 Tbsp Caper (rinsed and patted dry)
- 4 small, narrow scallions
- olive oil (cold-pressed)
- 2 garlic cloves
- salt
- freshly ground peppers
- 1 Tbsp finely chopped parsley
- 8 Baguette

Preparation steps
1.
Rinse tomatoes and cut into thick cubes. Rinse cucumber and cut into slices. Rinse and peel scallions. Cut into pieces.

Cut baguette slices into quarters and fry in a pan in 3 tablespoons olive oil on both sides. Mix tomatoes, cucumber, scallions and basil leaves in a bowl. Peel garlic and press into 4 tablespoons of oil. Pour oil on the salad in the bowl and stir together with the capers and the parsley. Season well with salt and pepper. Stir in the croutons and serve.
