2 Tbsps Pumpkin seed
5 ¼ ozs old fashioned Oats
3 ozs Whole Grain Spelt Flour
1 ¾ ozs Shredded coconut
½ tsp cinnamon
salt
2 ¼ ozs liquid Coconut oil

1 Baking sheet (approx. 25 x 30 cm)

Preparation steps

Peel bananas, cut coarsely and puree finely with almond drink in a high mixing bowl with a hand blender.

Coarsely chop cherries and pumpkin seeds. Mix oats, flour, coconut flakes, cherries, pumpkin seeds, cinnamon and 1 pinch of salt in a mixing bowl. Add banana puree and oil and mix until smooth.

Line a baking tray with baking paper. Spread the dough on the tray to a height of about 1 cm. Bake in the preheated oven at 160 °C / 310 ˚F on the lower rack for 1 hour. Then remove the granola sheet from the oven and cut it into 12 bars (approx. 1.5" x 4" each) on the tray with a sharp knife.

Reduce oven temperature to 100 °C /210 ˚F and dry the banana-cherry granola bars in the oven for another 30 minutes. Remove and allow to cool completely on the tray.
