Preparation steps

Preheat oven to 200°C (approximately 400°F). Peel pineapple, cut in half, remove core and cut halves into thin slices. Lay out pineapple slices onto 2 large pieces of baking paper. Mix orange juice and lime juice in a bowl. Add grated coconut. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Stir with cayenne pepper and add to juice. Break cinnamon stick in half along with vanilla pod and star anise. Add pieces to baking paper sheets and drizzle juice on top. Tie both separately with kitchen twine and place on a baking sheet. Bake for about 20 minutes. Open baking papers to serve. Garnish with fresh limes if desired.
