4 Red Bell pepper
1 day-old White roll
1 onion
2 garlic cloves
2 Tbsps olive oil
300 grams mixed Ground meat
1 egg
100 grams carrots
250 milliliters Broth
salt
freshly ground peppers
2 tsps ground paprika (sweet)
4 Tbsps grated, aged Mountain cheese

Preparation steps

Rinse bell peppers and cut lids off stem ends, Rinse peppers and remove seeds. Soak roll in lukewarm water. Peel carrots, onion and garlic, chop and sauté in 1 tablespoon oil. Mix ground meat, egg and well-squeezed roll, kneading to combine. Add carrots and onion garlic mixture and season with salt and pepper. Fill bell peppers with the mixture, put on lids and brush with the remaining olive oil. Mix broth and paprika, put in a large pan and add filled peppers. Seal tightly and cook over low heat about 45 minutes. If necessary, pour in a little water. Then remove the bell pepper lids, sprinkle with cheese and broil under the oven broiler until the cheese is melted and lightly browned, a few minutes, watching carefully.

Arrange stuffed peppers on plates and garnish with some cooking liquid.
