Preparation steps

Preheat the oven's broiler. Rinse, halve and seed the peppers. Rinse and trim the fennel and cut into thin strips. Place the peppers and fennel on a baking sheet. Broil for about 5-6 minutes (watching carefully), turning once. In the meantime, cut the goat cheese into slices.

Place the grilled vegetables in a bowl and mix with 3-4 tablespoons of olive oil and season with salt and plenty of pepper. Arrange the pepper halves on a baking sheet, place the fennel strips inside the hollow of each pepper half and top each with 1-2 slices of goat cheese. Place the sheet under the broiler and melt the cheese, then immediately remove from the oven and serve while still hot.
