4 large Mushrooms (stalks removed)
1 Tbsp olive oil (plus extra for drizzling)
2 cloves garlic cloves (crushed)
1 ¾ ozs Spinach
1 Tbsp chopped sun-dried tomatoes
1 Tbsp Dijon mustard
½ cup Cheese
1 cup breadcrumbs
2 Tbsps cream (35% fat)

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Chop the mushroom stalks. Heat the oil in a frying pan, add the chopped stalks and garlic and cook for a few minutes until softened. Add the spinach and cook for 1-2 minutes until wilted. Remove from the pan and put into a bowl.

Add the whole mushrooms to the frying pan and cook for 2-3 minutes until the tops are golden. Put into a baking dish.
4.
Add the tomatoes, mustard, most of the cheese, breadcrumbs, cream, salt and pepper to the spinach mixture and stir well. Divide between the mushrooms in the baking dish and sprinkle with the remaining cheese. Drizzle with a little olive oil.
5.
Cook for 15-20 minutes until the filling is bubbling. Garnish with basil leaves.
