1 egg white
2 Tbsps Lime juice
50 grams Amaretti cookies
6 fresh Apricot
1 Tbsp Shelled pistachio
Lemon balm

Preparation steps

1.

Beat egg white with 1 tablespoon of lime juice until very stiff. Crumble amaretti cookies very finely. Add together with remaining lime juice to beaten egg white. 

2.

Peel, halve and pit apricots and arrange on a baking sheet, cut side up. Stuff with cookie mixture. 

3.

Bake in preheated oven at 200°C (approxmately 400°F) for about 5 minutes or until golden brown. Chop pistachios. Remove apricots from the oven and sprinkle with pistachios. Serve garnihed with lemon balm leaves.
