6 medium, baking russet potato
good-quality olive oil (for rubbing)
Canola oil (for brushing)
kosher salt (to taste)
freshly ground Black pepper (to taste)
1 cup Cheddar cheese (grated)
12 strips cooked Bacon (crumbled)
1 cup Sour cream
2 scallions (rinsed; trimmed and cut into thin rings)

Preparation steps

Preheat oven to 400º F.

Scrub potatoes and pat dry with paper towels. Rub with olive oil and place on a baking sheet. Bake for about 1 hour, or until the potatoes are cooked through.

Remove potatoes from the oven and let cool until easy to handle. Cut in half horizontally.

Increase the oven temperature to 450° F. Brush canola oil all over the potato skins and sprinkle with salt. Place on a baking rack in a roasting pan. Cook for 10 minutes on one side, then turn the potatoes over and cook for another 10 minutes. Remove from potatoes from oven and cool until easy to handle.

Arrange the potatoes skin-side down on the baking rack. Sprinkle with freshly ground black pepper, cheddar cheese, and crumbled bacon. Return to the oven and broil for an additional 2 minutes, or until the cheese is bubbly. Remove from oven. Use tongs, transfer potatoes to a serving tray. Top with a dollop of sour cream and sprinkle with green onions. Season to taste with salt and pepper. Serve immediately.
