4 baking potatoes
2 Tbsps olive oil
1 Red onion (finely sliced)
1 green pepper (seeded and very finely diced)
1 red pepper (seeded and finely diced)
½ cup sun-dried tomatoes (chopped)
salt

Preparation steps

1.
Pre-heat the oven to 200°C | 400F | gas 6.
2.
Prick a few times with a fork then rub with the olive oil and season well.
3.
Place directly on an oven shelf and bake for 1 hour 15-30 minutes until they give a little when squeezed.
4.
Remove and slice in half, then arrange in baskets line with napkins. Top with the red onion, peppers and sun-dried tomato.
5.
Serve immediately.
