150 grams sugar
3 large, tart Apple
2 Tbsps lemon juice
30 grams soft butter
3 eggs
100 milliliters milk
½ Vanilla bean

Preparation steps

1.

In a small saucepan, caramelize 100 grams (approximately 3 1/2 ounce) sugar with 5 tablespoons water until light brown. Then pour immediately into a baking dish and let cool. Rinse apples, peel, cut in half and remove cores. Cut several thin slices into top of apples but do not cut through. Sprinkle apples with lemon juice.

Preheat oven to 180°C (approximately 350°F).

Spread softened butter on top of caramel and place 6 apple halves with distance between into the mold.

Halve vanilla bean lengthwise and scrape seeds out of one half with a sharp knife. Beat eggs with milk, remaining sugar and vanilla seeds. Pour over apples and around the mold.

Bake in preheated oven for 35-45 minutes.

Remove from oven and serve hot.
