½ small Frisée
8 Tbsps balsamic vinegar
4 Tbsps melted butter

Preparation steps

Peel the asparagus, remove the woody stalks and boil in salted water along with the sugar, the lemon juice and the butter for about 18 minutes.

In the meantime, rinse the lettuce, shake dry and tear into bite-sized pieces. Rinse, trim and slice the strawberries. Rinse the coriander, pluck a few leaves from each stem and add to the salad.

For the dressing, mix the vinegar with the butter and season with salt and pepper.

Remove the asparagus shoots from the liquid and stir a small amount of the liquid into the dressing.

Cut the asparagus and arrange on plates, either hot or cold, with the lettuce and strawberries. Drizzle with the dressing and garnish with coriander. Serve with ham alongside it.
