- 1 handful Arugula
- 2 yellow Bell pepper
- 2 red Bell pepper
- 2 Zucchini
- 250 grams Cherry tomatoes
- 100 grams Cheddar cheese
- Sea salt
- 2 Tbsps lemon juice
- coarsely ground peppers
Preparation steps

Preheat oven to broil. Rinse and cut bell peppers into quarters, remove seeds and ribs, and place on a baking sheet lined with parchment paper. Rinse zucchini, cut into thick slices, and place on baking sheet with bell peppers. Drizzle olive oil over vegetables and season with salt. Watching carefully, broil vegetables until golden brown, 3-4 minutes.

Rinse arugula, tear into bite-size pieces and place in a bowl. Rinse and halve cherry tomatoes and cut cheese into strips. Toss tomatoes and cheese with arugula. To serve, mix grilled vegetables into salad and season with sea salt, lemon juice and pepper.
