100 milliliters white wine
2 onions
2 garlic cloves
600 grams Pork (such as shoulder)
2 Tbsps olive oil
2 Tbsps Pastry flour
400 milliliters Beef broth
4 sprigs thyme

Preparation steps

Soak apricots in white wine for about 2 hours. Peel onions and garlic and finely dice. Rinse pork, pat dry, roll and sear in a wide pan with hot oil on all sides. Add onions and garlic and briefly saute. Sprinkle with flour and pour in broth. Cover and simmer about 30 minutes. Add apricots with wine and thyme. Simmer for another 30 minutes. Pour in more broth if necessary. Season with salt and pepper.

Serve with mashed potatoes if desired.
