For the poached apples
2 cups dry white wine
1 pc fresh ginger (approx. 3 cm, finely sliced)
2 Sage
1 Cinnamon stick
1 tsp cloves
3 Cardamom
2 Star anise
cup sugar
1 unwaxed lemon (zest and juice)
4 large Apple
For the nuts
3 Tbsps honey
¼ cup sugar
2 Tbsps butter
1.333 cups mixed Nut (e. g. walnuts, macadamia nuts, almonds, hazelnuts, roughly chopped)

Preparation steps

1.
Bring the wine to the boil with the ginger, sage, spices, sugar, 1 tbsp lemon juice and the zest of half the lemon. Simmer over a moderate heat for around 10 minutes.

Peel and core the apples, cut in half horizontally and cut slightly to ensure a level base. Transfer to the pan. Poach gently for 3-5 minutes, remove the pan from the heat and leave the apples in the liquid to cool.

Gently caramelise the honey with the sugar and butter. Stir in the chopped nuts.
4.
Arrange the apple halves on plates, pour over some of the cooking liquid and serve garnished with nuts.
