Gourmet Apple Dessert
Halve and core the apples. Cut into thin slices.
Melt the butter in a saute pan set over a moderate heat. Once it turns brown and nutty, sprinkle over the icing sugar and peppercorns.
Add the sliced apple to the pan and cook for 2 minutes. Remove the apple and peppercorns from the pan and set aside. Deglaze the pan with the cider, reducing it by half. Stir in the creme fraiche and remove from the heat.
Heat the grill to hot. Spread out the almonds on a grilling tray and toast under the hot grill for 1-2 minutes.
Arrange slices of the apple on serving plates. Top with the toasted almonds and scoops of green apple sorbet. Pour the creamy cider sauce around the plate and serve.
