1 cube fresh Yeast (42 grams or 1 1/2 ounces)
800 grams Whole wheat flour
200 grams Whole Grain Rye Flour
1 Tbsp salt
3 Tbsps sunflower oil
2 Tbsps Sunflower seed
2 Tbsps flaxseed
2 Tbsps Sesame seeds
2 Tbsps Oats
Pastry flour (for work surface)

Preparation steps

1.

Mix yeast in 500 ml (approximately 2 cups) lukewarm water until dissolved. Place flour and salt in a mixing bowl. Add yeast and oil. Knead with an electric hand mixer until smooth. Add more water or flour if necessary. Cover and let rise for about 45 minutes in a warm place.

Knead dough on a floured surface and work in sunflower seeds, flaxseed and sesame seeds. Shape dough into a loaf shape, roll in oats and place in greased loaf tin. Brush with warm water and sprinkle with remaining oats. Cover and let rest for 15 minutes.

Preheat oven to 210°C (approximately 400°F).

Bake bread in oven on middle shelf for about 60 minutes. Bread is done when bottom sounds hollow when tapped. Take out of oven, remove from tin and cool on a wire rack. Slice and serve.
