1 cube fresh Yeast (42 g)
500 grams Whole wheat flour
1 tsp salt
3 Tbsps vegetable oil
80 grams Pecan
2 Tbsps flaxseed
2 Tbsps Wheat bran
2 Tbsps Sesame seeds
1 Tbsp Pumpkin seed
1 Tbsp Sunflower seed
vegetable oil (for greasing)
Whole wheat flour (for dusting)

Preparation steps

Dissolve the yeast in about 270 ml of lukewarm water (approximately 1 cup). Combine the flour with the salt in a bowl, make a well in the center and pour in the yeast water along with the oil. Work everything into a smooth dough.

Chop the larger nuts and seeds and knead into the dough, together with the flax seed, bran and 1 tablespoon sesame seeds. Add a little extra water or flour as necessary, so that the dough is not too hard, but also no longer sticks to the bowl rim.

Cover and leave to rise for about 1 hour in a warm place.

Preheat the oven to 200°C (approximately 400ºF).

Grease a loaf pan with oil and dust with flour.

Shape the dough into a long loaf shape, place it in the pan and drizzle with water. Shower with the remaining sesame seeds and bake for about 1 hour.

Remove and allow to cool briefly in the pan. Carefully release it and leave to cool on a wire rack before serving.
