You can always substitute the fresh coriander with flat-leaft parsley or mint.

1 Vanilla bean (slit)
4 tsps sugar
4 Tbsps olive oil

2 Grapefruit
3 Tomatoes
10 ozs Watermelon
1 Red onion
4 fresh cilantro

Preparation steps

Rinse lemons in hot water, pat dry, grate zest of one lemon and cut zest into fine strips. Squeeze juice from both fruit. Combine lemon juice with lemon zest, vanilla seeds and sugar in a saucepan and simmer for 4 minutes. Add oil and season with salt and pepper. Peel grapefruit, removing as much pith as possible, and fillet (halve fillets if desired). Rinse and thinly slice tomatioes. Slive melon or cut into bite-sized pieces.

Peel, halve and thinly slice onion. Rinse cilantro, shake dry and pluck off leaves. Combine melon, grapefruit, tomato, onion and cilantro in a bowl and toss with the dressing. Arrange on plates and serve.
