150 grams Watercress
salt
400 grams Pastry flour

1 Tbsp olive oil

2 Tbsps butter

Preparation steps

1.

Rinse cress and blanch in boiling salted water. Squeeze and chop finely.

2.

Combine flour, eggs, oil and 1 teaspoon of salt, knead into a smooth, pliable dough. Add some water or flour, if necessary. Shape dough into a ball and wrap in a plastic wrap, let stand for about 30 minutes.

Divide dough into 3-4 pieces and knead each piece well, add cress to each dough roll. Roll out into thick rectangles, using pasta machine or a rolling pin. Cut into strips (about 5 mm wide) (approximately 1/5 inch) and dry on a floured surface.

Cook pasta for about 5 minutes in boiling salted water.

Toast nuts in a dry pan fry until fragrant. Add butter and drained pasta, toss well (if necessary, add a little pasta water). Season with salt and pepper and serve.
