- 400 grams Penne
- salt
- 1 small head Radicchio
- 2 Pear
- 200 milliliters Soy milk
- 200 grams Smoked tofu
- 1 Tbsp Cashews
- 2 Tbsps Nutritional yeast
- freshly ground peppers
- 3 Tbsps scallions
- 50 grams chopped Walnut

Preparation steps
1.
Cook penne in salted boiling water just until al dente (still very chewy), about 5 minutes. Drain and rinse.

Preheat oven to 180°C (approximately 350°F).

Rinse, trim and cut radicchio into strips. Rinse, halve and remove cores from pears. Cut pear halves into thin slices. Mash soy milk with smoked tofu, cashews, and nutritional yeast. Season with salt and pepper and stir in 2 tbsp chives.
4.
Combine pasta with radicchio and pears in a roasting pan. Sprinkle with walnuts and pour tofu-cream over it. Bake until golden-brown, about 25 minutes.
5.
Serve pasta sprinkled with remaining chives.
