400 grams Penne
salt
400 grams Radicchio
2 garlic cloves
1 shallot
2 Tbsps olive oil
100 milliliters dry white wine
200 milliliters Whipped cream
freshly ground peppers
½ tsp Red pepper flakes
2 Tbsps freshly chopped Basil
Basil (for garnishing)

Preparation steps

1.

Cook pasta in boiling salted water until al dente.

Rinse and halve radicchio, remove hard stalks and cut into fine strips. Peel garlic and shallot and chop finely. Heat oil in a pan and saute garlic, shallot and radicchio briefly.

Add white wine to the pan and saute briefly. Add cream and season with salt and pepper. Add chili flakes and simmer for 10 minutes on medium heat. Drain pasta and add to the pan, toss well and transfer to plates. Sprinkle with chopped basil and garnish with basil leaves. Serve.
