1 Tbsp Peanut oil
1 Tbsp lemon juice
2 Tbsps sherry (dry)
1 Tbsp soy sauce (dark)
½ tsp ground ginger
cayenne pepper (to taste)
300 grams Turkey cutlets (sliced ​​very thin)
Peanut oil (for cooking)
For the vegetables
4 Apple (sour)
1 small rod Leek
1 Tbsp Peanut oil
1 tsp Horseradish (ready-to-serve)
2 Tbsps apple cider vinegar
½ tsp sugar
salt

For the garnish
1 scallion
1 Tbsp Shelled pistachio (blanched)
2 stalks parsley

Preparation steps

For meat marinade, stir together peanut oil, lemon juice, sherry, soy sauce and ginger. Season with cayenne.

Cut the turkey cutlets in 1 cm (approximately 1/2 inch) wide strips and pound slightly between two layers of cling film with the bottom of the pan. Add the turkey strips to the marinade, mix well and leave for at least 30 minutes.

Meanwhile, peel the apples, quarter, remove seeds and cut into bite-size pieces. Trim the leek and cut diagonally into rings.

Heat the oil in a pan and cook the apples in oil on all sides vigorously until brown. Season with horseradish and apple cider vinegar and remove from the pan. Sauté the leeks in the remaining oil while stirring for 2 minutes, sprinkle with sugar and caramelize slightly, then add the apples again. Season with salt and pepper to taste and keep warm at a low temperature.

Take the turkey strips from the marinade and thread wavy on skewers.

Heat 1-2 tablespoons oil in a pan and cook skewers over medium heat for 4-6 minutes, turning once.

For the garnish, trim scallions, rinse and cut into rings. Chop pistachios. Rinse parsley, shake dry and chop the leaves.

Arrange the turkey kebabs on plates and drizzle the meat juice over top. Serve with the apples and leeks. Garnish everything with scallions, pistachios and chopped parsley.
