- 21 ozs Salmon
- 3 red peppers
- 2 Leeks
- 4 sprigs rosemary
- 1 clove garlic cloves (peeled and chopped)
- ½ tsp lemon zest (grated)
- 4 Tbsps rapeseed oil
- salt
- peppers (freshly ground)

Preparation steps
1.
Chop salmon into cubes. Rinse, halve and trim peppers; chop into bite-sized pieces. Rinse leeks and cut into 3 cm pieces. Thread salmon, pepper and leek chunks alternately onto skewers.

Strip rosemary needles from twigs. Crush garlic with a little salt with the back of a knife. Stir into oil with rosemary and lemon zest.
3.
Brush kebabs with rosemary-flavoured oil and grill for approx. 4-6 mins on all sides. Baste occasionally with oil. Season with salt and pepper.
4.
Serve with herb butter if liked.
