24 ozs Kumquat (sliced)
4 cups water
4 cups sugar
2 Tbsps lemon juice

Preparation steps

1.
Put the kumquat slices in a pan and cover with the water. Cover and leave to stand overnight.
2.
Heat the kumquats and water to simmering point and cook gently until tender.
3.
Add the sugar and lemon juice and cook, stirring over a low heat until the sugar has dissolved. Increase the heat and boil rapidly until setting point is reached. Stand for 10 minutes.
4.
Stir and spoon into hot sterilised jars, cover and seal.
