- 3 cups soft brown sugar
- 2 Limes (juiced)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 ⅓ cups water
- 4 ½ cups Banana (mashed)

Preparation steps
1.
Combine the sugar, lime juice, cinnamon, vanilla extract and water in a large stainless steel saucepan.
2.
Cook over a medium heat, stirring occasionally, until the liquid turns to a syrup.
3.
Add the mashed banana, stir well, and cook for a further 20-25 minutes over a slightly reduced heat. Stir the jam from time to time.
4.
Remove the jam once thickened and golden in colour and set to one side.
5.
Preheat the oven to 170°C (150°C fan) | 325F | gas 3. Place two 1 lb jam jars in the oven with their lids to sterilise. Remove after 10 minutes and fill with the banana jam.
6.
Seal immediately and let the jam cool to room temperature before serving or storing.
